theory practiced



Plated:
Salmon pastry with ricotta cheese.

Spinach.

Mango Salsa.

Backstory:
With pastry dough defrosted and ingredients pulled from yesterday's stacked salad experiment, I'm back on task with last night's original menu that borrows from the concept of the Greek spanakopita but with my salmon filling (+ ricotta for a little richness).  I was hesitant until I took my first bite.  Not bad for a food in theory made into reality.

I still have some salmon filling left and I've got ideas of wasabi aioli on a salmon burger.  I wonder how I'd go about doing that...

Plated:
Stacked Salad. (layer 1) salmon, ricotta, peppers, radish, pepper to taste; (layer 2) spicy cucumber salad; (layer 3) mango salsa

Spicy Kamja. A traditional Korean potato side dish with cayenne for some heat.

Backstory (because every dish should have one):
I received an amazing gift on my trip home in Alaska.  A family friend and one of our cooks fished for three days because they heard that I had hoped to bring salmon back to DC.  They surprised me with 22 pounds of beautiful silver salmon, but what I really brought back to DC was an astounding sense of the love I am provided by the people around me.

I baked a delicious fillet a few days ago with a white wine and ginger reduction and couldn't finish it all.  I pulled together a filling for an experimental salmon pastry, but neglected to defrost my pastry dough.  Plan B?  A stacked salmon salad and some other tasty Korean side dishes.
