teach a man to fish...



Plated:
Stacked Salad. (layer 1) salmon, ricotta, peppers, radish, pepper to taste; (layer 2) spicy cucumber salad; (layer 3) mango salsa

Spicy Kamja. A traditional Korean potato side dish with cayenne for some heat.

Backstory (because every dish should have one):
I received an amazing gift on my trip home in Alaska.  A family friend and one of our cooks fished for three days because they heard that I had hoped to bring salmon back to DC.  They surprised me with 22 pounds of beautiful silver salmon, but what I really brought back to DC was an astounding sense of the love I am provided by the people around me.

I baked a delicious fillet a few days ago with a white wine and ginger reduction and couldn't finish it all.  I pulled together a filling for an experimental salmon pastry, but neglected to defrost my pastry dough.  Plan B?  A stacked salmon salad and some other tasty Korean side dishes.
